Beef (ox) tongue roast is a personal favourite and I suspect for many other Goans around the world!
Ingredients for Beef Tongue Roast
1 Tongue (Ox tongue)
3 tbsp ginger – garlic paste
juice of 2 sour limes
1 tsp pepper powder
1.5 tsp salt
Tempering: 1 tbsp oil, 2 Kashmiri chillies, 5 pepper corns, 2 cloves, a small bit of cinnamon.
Method
Clean the tongue by boiling it in hot water for 20 minutes. Scrape and remove the outer skin. You can repeat by dipping the tongue in hot water again, keeping it for 10 minutes or so and scrape until it is thoroughly cleaned.
Prick it well and apply the ginger – garlic paste, salt, lime juice and pepper powder. Let it stand for a couple of hours.
In a pressure cooker, heat 1 tbsp oil and add the Kashmiri chillies broken into large bits, the cloves, peppercorns and cinnamon. Add the tongue and fry it well until brown on all sides. Add 2 cups water and pressure cook for 45 minutes.
And that’s your beef tongue roast ready. Slice and serve.
