The Batica recipe (Baath cake)

The Batica recipe or Baath as it is sometimes called, is a cake made with semolina and coconut.


Ingredients for Batica

400 gms Semolina (rawa)
400 gms sugar
8 eggs
2 coconuts (scraped)
1.5 tsp baking powder
50 gms butter
Vanilla essence


Make a sugar syrup with 2 cups water.  Cool.

Grind the coconut to a fine paste. Add and mix it well into the syrup.  Next add the semolina, mixed with the baking powder,  adding the eggs one at a time. Mix well, along with  the butter and vanilla essence. Keep for a couple of hours.

Pour into a greased cake baking  tray and bake till done at 180 deg. C for approx. 45 minutes, checking if done by inserting a knife or toothpick  in the centre and seeing if it comes out cleanly.
